Ah, the blight that is systemd.

It has its own everything.

Google-fu suggests trying

[Service]
LimitCORE=infinity

in the .service file. You should be able to test if it's working
by doing a kill -SEGV <pid> and make sure you get a coredump.

Aside from that, I'm not sure I'm afraid.
