There are many ways of analyzing logs...
These days I tend to feed everything into elasticsearch and look at the graphs in Kibana. There's a basic config for feeding detail logs in via logstash in the FreeRADIUS source now:

But this is only one of many ways of doing it - the answer will depend on what you are tring to get out of the logs.
