If you want to use Debian, that's fine.
If you want to use Debian with EAP (typically used in Wireless
deployments) you will have to create your own package. (License
restrictions prevent the redistribution of OpenSSL)

As for a basic install.
What do you want to do? What is your username/password database? What
is your userbase?
There is some good documentation appearing, but we'd need to know what
you want to do to direct you to it.
For example, If your userstore was ActiveDirectory, and you wanted
WindowsXP machines to authenticated using PEAP to a wireless AP, this
would be a good reference:

If you wanted to do something else, like SQLaccounting, there are guides
for that.
